NFL GameDay Treats & Snacks

With the first Super Bowl event this Sunday at home, large sports gatherings are quite different for 2021. I had fun in the kitchen learning and creating tasty GameDay Bite-Size treats and snacks that are simple and affordable. The snacks are Zucchini Bite-Size Balls with Southern Creole Dipping Sauce and Wonton Taco Cups. The treats are Mini Silk Chocolate Apple and Walnut Pies.

Zucchini Bite-Size Balls

Ingredients for the Zucchini Bite-Size Balls

Shred the Zucchini

Place Garlic Cloves in Hot Water (5mins), easier to peel the shell.

Squeeze as much water out as possible. (Preferably use a cheese cloth)

Butternut Squash, Zucchini, Parmesan Cheese, Panko Bread Crumb, 2 eggs, 2 garlic cloves & add your favorite seasonings. Fried the Zucchini Bite-Size Balls in Avocado Oil for at least 4-6 minutes on each side.

Mini Silk Chocolate Apple Pies

Ingredients for Mini Silk Chocolate Apple & Walnut Pies (Gluten-free) (Whole Foods)
Honey Crisp and Granny Smith Apples
Preheat oven to 375 degrees.

Slice Apples and Chop Walnuts

Carefully align the apples (flower design)

Top with Walnuts and Sprinkle Cinnamon. Baked at 375 degrees for 15-20 minutes.

Wonton Taco Cups

Spread the Olive Oil in each muffin mold. Lay down 3 wonton wraps and then lightly spray oil on top of the wraps. Preheat oven to 375 degrees. (Vegan Wonton Wraps)

Use an Ice Cream scooper to fill the wonton cups for equally sized portions.

Before adding chopped bell peppers to the wonton cups, I recommend sautéing first. One half is topped with the bell-peppers and the other half is sprinkled with parmesan cheese. Lightly brush the edges of the wonton cups with melted unsalted butter. Bake for 15 minutes.

These are just a few snacks and treats you can enjoy with the family this weekend for Super Bowl Sunday. Serve the Mini Silk Chocolate Apple Pies at chill temperature (Product is Raised Gluten-free). The Zucchini Bite-Size Balls have a crunchy outside with a creamy gooey inside. The Wonton Taco Cups can be topped with scallions, sour cream, or my favorite avocado slices. AIR FRY Chicken Wings 2 ways

Stop waiting, just purchase an Air Fry below! An Air Fry is essentially a small/medium countertop convention oven designed to simulate deep frying. A fan circulates hot air at high speed, producing a crisp layer via browning the food thus resulting in tasty savoury and sweet food. There are several brands that have an Air Fry, the one used for this recipe is a NUWAVE Jumbo Size 10-qt Digital Air Fryer from Bed Bath & Beyond (must purchase in-store). Cooked Chicken Wings TWO WAYS with the NUWAVE. One in a buttermilk batter and the other in Panko bread crumbs. Definitely prefer the Buttermilk Chicken Wings over the Panko bread crumbs. The layer of crispness and flavor was more prevalent in the buttermilk batter in comparison to the Panko bread crumbs.

Air Fry Buttermilk Chicken Wings

Ingredients

  • 1 1/2 cups of buttermilk
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon black pepper
  • Coconut Oil Spray

Instructions

  1. Preheat Air Fryer to 380 degrees.
  2. Wash and pat dry chicken. Squeeze half lemon on the chicken wings. Allow to dry. Put in a bowl and pour buttermilk on top. Cover the bowl with plastic wrap and place in to the fridge for two hours.
  3. Take the chicken out and using paper towel remove extra buttermilk. Prepare the spice mixture, mix all the spices and flour in a small bowl.
  4. Using thongs, dip each chicken piece in the mixture and place on the rack or plate. Make sure the chicken is coated all the way.
  5. Spray the bottom of the basket with Coconut Oil Spray. Place chicken in the basket, don’t overcrowd. Spray the top of the chicken with oil, just a bit.
  6. Cook for 35 minutes. Turn chicken halfway through the cooking process at 20 minutes. Spray dry flour spots with oil where needed.

Ingredients

  • 1 teaspoon of baking powder

  • 1 tablespoon cayenne pepper
  • 1 tablespoon black pepper
  • Coconut Oil Spray

Instructions

BBQ & Grillin’

Summer is a great time to have a BBQ & Grillin’ experience in your backyard in the midst of Covid-19. If you’re the Grill Master, it’s best to wake up early in the morning to set up and get your charcoals started. It is critical to establish a placement of your charcoals by dividing the grill into three sections: hot, warm and cool. You must continue to rotate the food on the grill so it does not BURN. With over 3 years of experience, along with being taught the fundamentals of BBQ from my father, it is important to manage the temperature of the charcoals. The majority of the charcoals must turn white-gray, which signifies the temperature is between 240 to 300 Fahrenheit. Slip on that Cooking Glove with a TONG in hand, its Grillin’ Time!

Use your favorite Oil-based Marinade (easier to cook on the grill)
Side note: (Marinade both the vegetables and meat for 2 hours in the refrigerator)

Matcha Green Tea and Spice Chia Pudding

Notes

*If the chia pudding is to loose, whisk in more chia seeds and let it thicken over night. If the pudding is too thick, add a touch of milk to thin the consistency.

Ingredients

  • Matcha Green Tea Chia Pudding:
  • 2 tbsp chia seeds
  • 1/2 cup unsweetened coconut milk
  • 1 tbsp of organic agave or other sweetener
  • 1.5 grams of Matcha Green Tea Powder
  • ***
  • Spice Chia Pudding:
  • 2 tbsp chia seeds
  • 1/2 cup unsweetened coconut milk
  • 1 tbsp of organic agave or other sweetener
  • 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • *
  • Toppings:
  • 1/2 cup of organic raspberries
  • Almonds to taste
  • Mint

Instructions

  1. For *Matcha Green Tea Chia Pudding:
  2. Add the coconut milk and agave into a small bowl and mix well.
  3. Whisk in the chia seeds and matcha green tea powder.
  4. For *Spice Chia Pudding:
  5. Add the coconut milk and agave into a small bowl and mix well.
  6. Whisk in the chia seeds with cinnamon and nutmeg.
  7. *For Both Puddings:
  8. Refrigerate for 30 minutes and then whisk again.
  9. Cover and refrigerate for 4-5 hours, or overnight until thickened (*Side Note)
  10. Stir well before serving.
  11. Add the organic raspberries, sprinkle the silvered almonds and top with a mint leaf.
