Gluten-Free Sweet Potato Pie

This Holiday Season (2020) is very different in many ways but I have continued to push forth the envelope in my cooking skills. For this year’s Thanksgiving feast, I prepared a Gluten-Free Sweet Potato Pie and used the NuWave Air Fryer to bake my Sweet Potato Yams. The Fall Leaf toppers on the Sweet Potato Pie are also Gluten-Free. The Sweet Potatoes are baked beautifully with gushing caramelized juices from the sides of these root vegetables. From this point forward, this food blog will incorporate more Gluten-Free friendly meals.

Fall Leaf Pie Toppers

Notes

If the dough starts to get warm, wrap it up in foil and place it into the freezer for 20 minutes.

Ingredients

  • 1 1/4 cup Almond Flour
  • 2 Tbsp Coconut Flour
  • 1/4 cup Organic Agave
  • Pinch of Himalayan Pink Salt Crystals
  • 1 tsp of vanilla
  • 1/2 tsp Almond extract
  • 1 tsp of cinnamon
  • 1 large brown egg
  • Parchment Paper

Instructions

  1. Mix dry ingredients together first and then add in your wet ingredients.
  2. Mix together the Almond and Coconut flour.
  3. Add in a pinch of salt and cinnamon.
  4. Mix those dry ingredients thoroughly.
  5. Next, add in the Organic Agave, Vanilla, Almond extract and the brown egg.
  6. Now take a medium size piece of parchment paper and place this down on your counter top. Sprinkle a bit of coconut flour down on the parchment before placing the dough (this prevents the dough from adhering to the parchment paper).
  7. Retrieve another piece of parchment paper and place it on top of the round bar of dough.
  8. Set your oven to 350 degrees.
  9. Take your rolling pin and begin to flatten the dough out to a medium level of thickness.
  10. Remove the top layer of parchment paper. Now, before sticking the fall cut out into the dough, lightly sprinkle coconut flour in the mold in order to prevent a limited amount of dough to get caught in the grooves.
  11. Prepare a sheet of foil to place the cut out fall leaves pieces on before shifting them into the convention oven at 350 degrees for roughy 9 -10 minutes.

Gluten-Free Sweet Potato Pie

Ingredients

  • 2 large Sweet Potatoes
  • 3 eggs, at room temperature
  • 1 cup of Oat Creamer
  • 1/4 cup Organic Agave
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • dash of ground allspice
  • dash of ginger

Instructions

  1. Sweet Potatoes:
  2. Cover with unsalted butter or coconut oil and sprinkle roasted cinnamon on top of the yams.
  3. Bake in the Air Fryer @ 385 degrees for 2 hours.
  4. Sweet Potato Pie Filling:
  5. Preheat oven to 350 degrees.
  6. Peel the skin from the cooled sweet potatoes and placed them into a large bowl and mash them with a fork.
  7. Add in your spices and salt.
  8. Mix thoroughly, then add in the organic agave, eggs, and oat creamer.
  9. Again mix the ingredients thoroughly with a spatula.
  10. Carefully pour the mixture into the Gluten-Free Pie Crusts.
  11. Allow a 1/2 inch of space between the pie filling and edge of the pie crust (for rising of the pie).
  12. Baked the pie for roughly 50 minutes, or until golden brown around the edges.
  13. Cool for 20-30 minutes before slicing.

A Banana Tarte Tatin

This delicious dessert is from a talented cook, by the name of Nadiya Hussain. She has a Netflix series called Nadiya’s Time to Eat. I have watched the entire season 1, which has 7 episodes. Nadiya is in the United Kingdom. She creates simple dishes with a burst of flavor. As soon as I saw the Banana Tarte Tatin, I knew I had to give it a shot. Nadia used hazelnuts for her recipe but instead I substituted for walnuts. Thank you Nadiya for this delectable recipe!

Banana Tarte Tatin

Notes

*Can substitute the walnuts for either hazelnuts or pecans. *Sugar Alternative: 1/4 cup of light brown sugar, agave or 1/4 cup of barley.

Ingredients

  • 4 Bananas
  • 1 sheet of Puff Pastry Dough
  • 1/3 cup of unsalted butter
  • 1 cup of cold glass of water
  • 1 cup of light brown sugar (Sugar Alternative*)
  • 1/2 cup of finely chopped walnuts (Various Options*)

Instructions

  1. Preheat Oven at 365 degrees
  2. Allow your pastry dough to defrost (If your pastry dough is frozen, place in the refrigerator for at least one hour prior to cooking).
  3. Placing the banana on its side, cut in rounds.
  4. Begin by melting the unsalted butter in your skillet on low/medium heat. Once the butter is melted, add in the light brown sugar.
  5. Constantly stir the butter and brown sugar until thicken.
  6. Toss in the finely chopped walnuts. Make sure they are covered in the sauce.
  7. Now carefully align your sliced bananas around the circumference of the skillet, starting from the outside to inside.
  8. Now on a clean surface, sprinkle your flour on the counter and begin rolling out your puff pastry. As you begin rolling sprinkle flour again. Make sure the puff pastry is 2cm wider in circumference than the skillet you are cooking in.
  9. Once the puff pastry is rolled out, cut out a circle and carefully place the puff pastry on top of the caramelised bananas and walnuts.
  10. Now tuck the puff pastry underneath the filing by creating a wall.
  11. Place the skillet in the 365 degree oven for 30 minutes.
  12. Once out of the oven, let the pastry cool down.
  13. Taking a plate that covers the entire skillet and flip the tarte onto the plate.
  14. Serve warm with ice cream or whip cream.
