Breakfast Egg Rolls

Breakfast can include a range of creative dishes. This Breakfast dish is inspired from @nadiyajhussian of her @netflix series, “Time to Eat.” Changed a few of the ingredients: used Brown Rice Tortilla’s (Wheat and Gluten-free), Garlic Spread-Dip and Parmesan Cheese. Breakfast Egg Rolls

Ingredients

  • 3 eggs
  • 2 Brown Rice Tortilla’s (wheat and gluten free)
  • 2-3 tablespoons of Grape Seed Oil
  • 1/4 teaspoon of Dill Weed
  • 1/4 teaspoon of Black Pepper
  • 2 Tablespoons of Parmesan Cheese
  • Garlic Spread-Dip

Instructions

  1. Turn the flame onto medium/high heat, then pour in 2-3 tablespoons of oil. The skillet should be hot but not smoky.
  2. Prep:
  3. Whisk 3 eggs, add in the Dill Weed and Black Pepper (*Optional: cut your mushrooms, green onion or olives and place the ingredients into separate bowls).
  4. Completely cover the Brown Rice Tortilla or use your favorite Tortilla with the Garlic Spread-Dip or Hummus.
  5. Test your oil by dropping a small drop of your egg to see if it starts to cook (If the egg starts to crisp on the edges, pour in half of your egg mixture into the skillet and begin moving it in a circular motion).
  6. Immediately, place the garlic spread-dip side of the tortilla directly on top of the fried egg.
  7. Apply slight pressure for the egg to adhere to the Garlic Spread-Dip.
  8. Start rotating the tortilla and egg in a circular motion for 15 seconds
  9. Let the egg cook but don’t let it brown.
  10. Using a spatular flip the tortilla and egg over and now allow the tortilla to cook until golden brown.
  11. Sprinkle your favorite cheese.
  12. Once the tortilla is cooked, carefully place it on a flat plate and begin to roll it into an egg roll form. Using a napkin to help with the heat, roll tightly.
  13. Cut diagonally, to see the layers of the Breakfast Egg Roll (Don’t worry, it took me 3 times to master this dish :).

Crispy Edges of the Egg
Medium/High Heat
Adhere the Tortilla to the Egg
Rotate in circular motion with your hand
Flip the Egg and Brown Rice Tortilla Over
Cook both sides evenly
Sprinkle the Parmesan Cheese or your favorites

A Banana Tarte Tatin

This delicious dessert is from a talented cook, by the name of Nadiya Hussain. She has a Netflix series called Nadiya’s Time to Eat. I have watched the entire season 1, which has 7 episodes. Nadiya is in the United Kingdom. She creates simple dishes with a burst of flavor. As soon as I saw the Banana Tarte Tatin, I knew I had to give it a shot. Nadia used hazelnuts for her recipe but instead I substituted for walnuts. Thank you Nadiya for this delectable recipe!

Banana Tarte Tatin

Notes

*Can substitute the walnuts for either hazelnuts or pecans. *Sugar Alternative: 1/4 cup of light brown sugar, agave or 1/4 cup of barley.

Ingredients

  • 4 Bananas
  • 1 sheet of Puff Pastry Dough
  • 1/3 cup of unsalted butter
  • 1 cup of cold glass of water
  • 1 cup of light brown sugar (Sugar Alternative*)
  • 1/2 cup of finely chopped walnuts (Various Options*)

Instructions

  1. Preheat Oven at 365 degrees
  2. Allow your pastry dough to defrost (If your pastry dough is frozen, place in the refrigerator for at least one hour prior to cooking).
  3. Placing the banana on its side, cut in rounds.
  4. Begin by melting the unsalted butter in your skillet on low/medium heat. Once the butter is melted, add in the light brown sugar.
  5. Constantly stir the butter and brown sugar until thicken.
  6. Toss in the finely chopped walnuts. Make sure they are covered in the sauce.
  7. Now carefully align your sliced bananas around the circumference of the skillet, starting from the outside to inside.
  8. Now on a clean surface, sprinkle your flour on the counter and begin rolling out your puff pastry. As you begin rolling sprinkle flour again. Make sure the puff pastry is 2cm wider in circumference than the skillet you are cooking in.
  9. Once the puff pastry is rolled out, cut out a circle and carefully place the puff pastry on top of the caramelised bananas and walnuts.
  10. Now tuck the puff pastry underneath the filing by creating a wall.
  11. Place the skillet in the 365 degree oven for 30 minutes.
  12. Once out of the oven, let the pastry cool down.
  13. Taking a plate that covers the entire skillet and flip the tarte onto the plate.
  14. Serve warm with ice cream or whip cream.
